KARAAGE CHICKEN


Fried chicken is popular all around the world, with each country having having its own style. This recipe is very easy and is a good introduction to Japanese fried chicken. You will be amazed at how many of these small treats you, your family and your friends will eat. 

 

Ingredients | Serves 4

  • 600g boneless chicken thighs with skin on

  • 2 tablespoon garlic and ginger soy sauce 

  • Salt - to season 

  • 80g potato starch 

  • 40g plain flour 

  • Vegetable oil - for deep frying 

  • Lemon or lime and mayonnaise to serve 

    For the garlic and ginger soy sauce:

  • 20g garlic 

  • 20g fresh ginger 

  • 100ml soy sauce

Method

  1. To make the garlic and ginger soy sauce: peel the garlic and ginger, slice thinly and add to the soy sauce. Put aside for later.

  2. Cut the chicken in small, easy-to-eat pieces. Completely cover with the ginger and garlic soy sauce marinade for 10 minutes, then season with salt to taste.

  3. Combine the potato starch and flour and completely coat each piece of chicken then deep-fry in very hot oil (180℃). Cook for 3 minutes, until the chicken is a golden colour, cooked through and very crispy, remove from the oil and drain on a rack or on some kitchen paper.

  4. Put each piece chicken on a small wooden skewer and serve with lemon and mayonnaise.
