FATTOUSH SALAD


Fattoush is a classic in Arab cooking. Sumac gives it authentic flavour and isn’t hard to find. 

 

Ingredients | Serves 4-6

  • 2 pitta breads 

  • 7 tbsp extra-virgin olive oil 

  • 3 ripe tomatoes, quartered and chopped into small pieces 

  • 1 small cucumber, halved lengthways and chopped into small pieces 

  • ½ green pepper, cored, de-seeded and finely chopped. 

  • 150g radishes, cut into small slices 

  • 1 baby gem lettuces, cored and finely chopped 

  • 3 spring onions, finely chopped 

  • 3 tbsp finely chopped fresh parsley 

  • 1 tbsp finely chopped fresh mint

  • Juice of ½ lemon

  • 2 tbsp pomegranate molasses 

  • Good pinch of sumac 

  • Salt and pepper  


SHOP THE LOOK

Method:

  1. Preheat the oven to 180℃. Line a baking sheet with baking paper.

  2. Cut the pitta bread into small square pieces. Spread on the prepared baking sheet and add 2 tablespoons of the olive oil, salt and pepper to taste; toss to combine and bake for 10 minutes, until golden and crisp. Set aside.

  3. Place the chopped vegetables in a salad bowl, add the spring onions and chopped herbs.

  4. In a small bowl, combined the the lemon juice, olive oil and pomegranate molasses, season with salt and pepper and mix well. Add the the dressing to the salad and toss well. 

  5. Top with the crispy pitta, sprinkle with sumac and serve immediately.
