SHAKSHUKA


Shakshuka is a very popular breakfast dish throughout the Middle East and originated from North Africa- Tunisia. It's made from simple, humble ingredients and is vegetarian. This traditional version uses tomatoes, onions and cumin as the base with eggs poached on top.

 

Ingredients | Serves 4

  • 2 tbsp olive oil 

  • 2 onions, finely chopped 

  • 1 green pepper, cored, de-seeded and finely sliced. 

  • 2 garlic cloves, grated 

  • ½ cumin seeds 

  • 1 tbsp tomato purée 

  • 1x 400g tin chopped tomatoes 

  • 75ml water 

  • 4 eggs 

  • Salt and pepper 

  • Flatbreads and Greek yogurt, to serve

Method:

  1. Heat the oil in a deep frying pan on a medium-high heat. When hot, add the onions and peppers and fry for 5 minutes, stirring often, until soft and lightly coloured. 

  2. Add the garlic and cook for 1 minute, then add the cumin seeds and tomato purée and cook for 2 minutes until fragrant. 

  3. Add the tomatoes and water and simmer for 10 minutes or until the tomatoes have broken down and the mixture has thickened slightly. Season with salt and pepper to taste. 

  4. Make four small hollows in the mixture and  crack an egg in each. Gently simmer until the whites are cooked, but the yolks remain runny, 10-15 minutes. 

  5. Serve from the pan, along with flatbreads and Greek yogurt.
